Chirashi sushi (is called Chirashizushi in Japan) is a kind of sushi.
Although sushi is often misunderstood as just nigiri (a small hand-shaped of rice topped with a piece of raw fish)
or roll sushi, But,there are many types of sushi in Japan actually.
Chirashi sushi is served for celebrate something or used in party in Japan.
This adorable and colorful dish is made from sushi rice with a variety of shimmered vegetables , and toppings are sprinkled over the top.
On 3rd March,Japanese mothers and grandmothers are make this for pray that their daughters and granddaughters will grow up in good health.
They also have this special kind of sushi in the front of the [Hina-Ningyo].
This is called [Hina-matsuri],and it is Japanese traditional custom only for the girls.
It is Japanese wonderful tradition!
For sushi rice:
2 cups Sticky rice(dried.not cooked)
2 and 1/5 cups Water
2 and 2/3 tablespoons rice vinegar
1 and 1/2 tablespoons sugar
2/3 teaspoon salt
For Shimmered vegetables:
3 dried shiitake mushrooms
Dried shiitake mushrooms soup with dipped in 1/2 cups warm water
1 tablespoon soy sauce
1/2 tablespoon sugar
1/2 teaspoon sake
1/2 teaspoon mirin
For Shredded omelette:
2 teaspoons sugar
1 pinch salt
4 tablespoon sakura denbu(made from dried codfish and sugar)
*You can use sugar and pink-colored pickled sweet ginger instead of it)
Red or Pink colored pickled ginger (chopped or shredded as you like)
1)Remove stems from shiitake and slice it thinly.
2)Shred or chop carrot
3)Heat 2/3 cup of water and [A] in the pod.
4)Add shiitake, carrot, and Simmer it on low heat until the liquid is almost gone.
1)Put eggs in a bowl with 1 and 1/2 teaspoons sugar,and stair it well.
2)Put vegetable oil a little to the pan,and heat it
3)Spread (1) on the pan and make a thin in medium heat *cook it carefully ,do not make it burn
4)Shred the omelet into thin strips.
1)Remove the vein and boil it into red
2)Peel the shrimps
1)In a small saucepan, mix rice vinegar, sugar, and salt.
Put the pan on low heat and heat until the sugar dissolves. Cool the vinegar mixture.
2)Spread the hot steamed rice into a large plate or a large bowl.
3)Sprinkle the vinegar mixture over the rice and quickly mix into the rice using a shamoji (rice spatula).
The final process
1)Put sushi rice in large bowl,mix it with shimmered vegetables.
2)Serve sushi rice on a large plate or individual bowls or shaped it by mold as you like.
3)Spread and decorate toppings on it or put among sushi rice.
